This photo is just to show you how the modern cave works.The popular "BiB" (Blister in Bag) form of container (normally 3litres/5litres/10litres)where the wine is sealed under vacuum,thus facilitating it's simple transport, has become big business. The caves "hire" a sort of lorry (photo) equipped with all the necessary equipment. This lorry is then "hooked-up" to the delivery of wine from the cellars, and everything happens automatically.
A point to note is that although the wine is hermetically sealed,and therefore secure from air, it will still need it's resting period before drinking or filling into your own bottles.3 to 4 weeks is a small price to pay for a wine which will be 10 times more agreeable!
